What opacity should I use for a watermark?

Around 40-60% opacity is usually enough to discourage unauthorized use while staying unobtrusive. Increase it for stronger protection, or lower it if the watermark feels too distracting.

Can I repeat a watermark across the whole image?

Yes. Enable the tiled watermark option to repeat your text diagonally across the entire photo, which makes it much harder to crop out.
